The purpose of a thermostat isn't just to open, but to maintain a vehicle's normal operating temperature. If you had a diagram of that engine's cooling system, you could understand why it has two. I know it has two, and it's very likely that there's some passage or outlet through which water circulates to the radiator even if one of the two is closed. If one of the two is missing, the engine won't operate at the same temperature, which means uneven wear on the parts and inefficient engine performance. When something is added to an engine, it's not for no reason; there's a purpose. If thermostats were added for no reason in warm climates, they wouldn't be used, nor would catalytic converters. In my country, they only have one catalytic converter and one oxygen sensor, but North Americans have two or even four, and the number of cylinders doesn't matter, because the Sentra with the QG18 engine from 2000 to 2003 had four catalytic converters. The fact that your engine has more than one thermostat is not for nothing.
