Oscillations in the temperature indicator and if it is related to the occasional hot start difficulty. Cold starts perfectly

Manual-Mecanica Answer on the Seat Ibiza theme 1.4 60 hp year 2000
Hi Jcerdan1, in the water box, there are 2 probes, 1 with 2 terminals (indicates temperature in the box), and another with 4 terminals or poles (this serves for motor management) in the 14AEEX engine that I imagine is yours. If so, make sure that the plug and wiring are well, the probes can be measured with polyimeter disassembling and heating them with lighter you will see their resistance, ok, if it does not varied, it is defective. As for the hot start, the 4 pole probe that does not regulate when it is hot and sends the signal as the engine is cold, putting more fuel (as if it were cold the engine), I advise you since you are, that you verify the thermostat, because in these models, the housing is plastic and they leave a lot, I already know several. I hope it helps you.
